Spinach & celeriac salad with walnuts

To make this dish at home by prescription from the author Gomer would need: 100g pkt walnuts, 60ml white wine vinegar, 1 tbsp olive oil, 1 1/2 tbsp brown sugar, 2 tbsp fresh lemon juice , 1 celeriac, trimmed, peeled, 1 bunch radish, trimmed, thinly sliced, 140g pkt spinach, rocket & kale salad mix .

Ingredients:

  • 100g pkt walnuts 
  • 60ml white wine vinegar 
  • 1 tbsp olive oil 
  • 1 1/2 tbsp brown sugar 
  • 2 tbsp fresh lemon juice 
  • 1 celeriac, trimmed, peeled 
  • 1 bunch radish, trimmed, thinly sliced 
  • 140g pkt spinach, rocket & kale salad mix 

Instructions

  1. Heat a frying pan over medium heat. Cook the walnuts for 2-3 minutes or until lightly toasted. Set aside to cool.
  2. Whisk the vinegar, oil and sugar in a jug until well combined. Season with salt and pepper.
  3. Fill a large bowl with iced water. Add the lemon juice. Thinly slice the celeriac and place in the water. Place the radish in a large serving bowl.
  4. Drain the celeriac. Add the walnuts, celeriac and salad mix to the radish. Add the dressing to the salad and toss to combine.
