To make this dish at home by prescription from the author Gomer would need: 2 baby fennel bulbs, ends trimmed reserving fronds, 80ml fresh orange juice, 2 1/2 tbsp extra virgin olive oil, 1 tsp Dijon mustard, 1 small radicchio lettuce, leaves separated, torn , 1 baby cos lettuce, leaves separated, 70g baby rocket leaves .
Ingredients:
- 2 baby fennel bulbs, ends trimmed reserving fronds
- 80ml fresh orange juice
- 2 1/2 tbsp extra virgin olive oil
- 1 tsp Dijon mustard
- 1 small radicchio lettuce, leaves separated, torn
- 1 baby cos lettuce, leaves separated
- 70g baby rocket leaves
Instructions
- Chop 1 tablespoon of the reserved fennel fronds. Place in a screw-top jar. Add the orange juice, oil and mustard. Season with salt and pepper. Shake until well combined.
- Thinly slice the fennel. Place the fennel, radicchio, lettuce, rocket and dressing in a serving dish. Toss until well combined.
