Fennel & radicchio salad makes a simple, delicious Italian-accented side dish.

To make this dish at home by prescription from the author Gomer would need: 2 baby fennel bulbs, ends trimmed reserving fronds, 80ml fresh orange juice, 2 1/2 tbsp extra virgin olive oil, 1 tsp Dijon mustard, 1 small radicchio lettuce, leaves separated, torn , 1 baby cos lettuce, leaves separated, 70g baby rocket leaves .

Ingredients:

  • 2 baby fennel bulbs, ends trimmed reserving fronds 
  • 80ml fresh orange juice 
  • 2 1/2 tbsp extra virgin olive oil 
  • 1 tsp Dijon mustard 
  • 1 small radicchio lettuce, leaves separated, torn 
  • 1 baby cos lettuce, leaves separated 
  • 70g baby rocket leaves 

Instructions

  1. Chop 1 tablespoon of the reserved fennel fronds. Place in a screw-top jar. Add the orange juice, oil and mustard. Season with salt and pepper. Shake until well combined.
  2. Thinly slice the fennel. Place the fennel, radicchio, lettuce, rocket and dressing in a serving dish. Toss until well combined.
