To make this dish at home by prescription from the author Gomer would need: 125g fresh baby corn, thinly sliced lengthways, 150g snow peas, trimmed, thinly sliced lengthways, 5 cups shredded green cabbage, 1 red onion, halved, thinly sliced, 2 tsp finely-grated lemon rind , 1/2 cup lemon juice, 1/4 cup olive oil, 1/2 cup chopped fresh coriander leaves , 1 tsp Dijon mustard.

Ingredients:

  • 125g fresh baby corn, thinly sliced lengthways 
  • 150g snow peas, trimmed, thinly sliced lengthways 
  • 5 cups shredded green cabbage 
  • 1 red onion, halved, thinly sliced 
  • 2 tsp finely-grated lemon rind 
  • 1/2 cup lemon juice 
  • 1/4 cup olive oil 
  • 1/2 cup chopped fresh coriander leaves 
  • 1 tsp Dijon mustard 

Instructions

  1. Place corn and snow peas in a heatproof bowl. Cover with boiling water. Stand for 5 minutes. Drain. Rinse under cold water. Remove to a serving bowl. Add cabbage and onion.
  2. Make dressing: Combine lemon rind, juice, oil, coriander and mustard in a screw-top jar. Secure lid. Shake to combine.
  3. Pour dressing over salad. Toss to combine. Serve.
