To make this dish at home by prescription from the author Gomer would need: 200g vermicelli noodles, 1 1/2 cups cooked turkey, shredded, 200g red cherry tomatoes, halved, 1 small red onion sliced, 1 tbsp fish sauce , 2 tbsp sweet chilli sauce, 1/4 cup of whole coriander leaves, 2 tbsp of shredded mint , 2 tbsp chopped roasted cashews.
Ingredients:
- 200g vermicelli noodles
- 1 1/2 cups cooked turkey, shredded
- 200g red cherry tomatoes, halved
- 1 small red onion sliced
- 1 tbsp fish sauce
- 2 tbsp sweet chilli sauce
- 1/4 cup of whole coriander leaves
- 2 tbsp of shredded mint
- 2 tbsp chopped roasted cashews
Instructions
- Place the vermicelli noodles in a large heatproof bowl and cover with boiling water. Stand for 5 minutes, then drain well and set aside to cool.
- Meanwhile, place the turkey, tomatoes and onion in a bowl and set aside.
- To make the dressing, place the fish sauce and sweet chilli sauce in a small bowl and whisk to combine.
- Combine the noodles, turkey mixture, coriander and mint.
- Drizzle with the dressing and toss to coat. Divide noodle salad between serving bowls and sprinkle with cashews. Serve with lime wedges.
