To make this dish at home by prescription from the author Gomer would need: 2 tsp vegetable oil, 3 beef sausages, 1 1/2 cups couscous, 100g snow peas, trimmed, thinly sliced diagonally, 250g cherry tomatoes, halved , 1/4 cup fresh basil leaves, torn, 1/4 cup balsamic salad dressing .

Ingredients:

  • 2 tsp vegetable oil 
  • 3 beef sausages 
  • 1 1/2 cups couscous 
  • 100g snow peas, trimmed, thinly sliced diagonally 
  • 250g cherry tomatoes, halved 
  • 1/4 cup fresh basil leaves, torn 
  • 1/4 cup balsamic salad dressing 

Instructions

  1. Heat oil in a large heavy-based frying pan over medium-high heat. Cook sausages, turning, for 8 to 10 minutes or until sausages are browned and cooked through. Transfer to a board. Cut sausages diagonally into 1cm-thick slices.
  2. Meanwhile, place couscous in a large heatproof bowl. Stir in 11/2 cups boiling water. Cover. Set aside for 5 minutes or until liquid has absorbed. Using a fork, fluff couscous to separate grains.
  3. Add sausage, snow pea, tomato and basil to couscous. Season with salt and pepper. Toss to combine. Drizzle with dressing. Serve.
