Traditional waldorf salad tastes terrific with creamy mayonnaise, crunchy walnuts and tangy blue cheese.

To make this dish at home by prescription from the author Gomer would need: 2 tsp olive oil, 1/2 small red onion, thinly sliced, 6 celery stalks, thinly sliced diagonally, 2 garlic cloves, crushed, 1/2 cup roughly chopped walnuts , 1/4 cup whole-egg mayonnaise, 2 tsp wholegrain mustard, 2 small red delicious apples, cored, halved, thinly sliced , 50g mild blue cheese, chopped.
Ingredients:
- 2 tsp olive oil
- 1/2 small red onion, thinly sliced
- 6 celery stalks, thinly sliced diagonally
- 2 garlic cloves, crushed
- 1/2 cup roughly chopped walnuts
- 1/4 cup whole-egg mayonnaise
- 2 tsp wholegrain mustard
- 2 small red delicious apples, cored, halved, thinly sliced
- 50g mild blue cheese, chopped
Instructions
- Heat oil in a frying pan over medium-high heat. Add onion. Cook, stirring, for 2 minutes or until softened. Add celery and garlic. Cook, stirring, for 3 minutes or until heated through. Add 1/3 cup walnuts. Cook for 1 minute.
- Meanwhile, combine mayonnaise and mustard in a large bowl. Add apple. Stir to combine.
- Combine celery mixture and mayonnaise mixture. Top with cheese and remaining walnuts. Serve.
