To make this dish at home by prescription from the author Gomer would need: 1 punnet cherry tomatoes, halved, 1 punnet yellow grape tomatoes, 1/2 punnet red grape tomatoes, 2 small avocados, flesh cut into cubes, 16 cooked medium prawns, peeled, deveined, tails left intact , 1 tbsp sherry vinegar*, 1 tbsp olive oil, 2 tbsp oregano leaves .

Ingredients:

  • 1 punnet cherry tomatoes, halved 
  • 1 punnet yellow grape tomatoes 
  • 1/2 punnet red grape tomatoes 
  • 2 small avocados, flesh cut into cubes 
  • 16 cooked medium prawns, peeled, deveined, tails left intact 
  • 1 tbsp sherry vinegar* 
  • 1 tbsp olive oil 
  • 2 tbsp oregano leaves 

Instructions

  1. To make the vinaigrette, place all of the ingredients in a screwtop jar and shake well to combine.
  2. Place all the tomatoes and the avocado in a bowl, then add half the vinaigrette and toss to coat. Place in a serving bowl, top with the prawns and drizzle with the remaining dressing.
  3. Season with sea salt and freshly ground black pepper.
