To make this dish at home by prescription from the author Gomer would need: 2 tbsp olive oil, 1 large onion, finely chopped, 1 carrot, finely diced, 1 zucchini, finely diced, 400g can borlotti beans, rinsed and drained , 100g reduced-fat fetta, crumbled, 1/2 cup walnuts, roughly chopped, 1/2 cup fresh flat-leaf parsley, finely chopped , juice of 1 lemon.

Ingredients:

  • 2 tbsp olive oil 
  • 1 large onion, finely chopped 
  • 1 carrot, finely diced 
  • 1 zucchini, finely diced 
  • 400g can borlotti beans, rinsed and drained 
  • 100g reduced-fat fetta, crumbled 
  • 1/2 cup walnuts, roughly chopped 
  • 1/2 cup fresh flat-leaf parsley, finely chopped 
  • juice of 1 lemon 

Instructions

  1. Heat 1 tablespoon of oil in a large frying pan over medium heat. Add onion and carrot. Cook for 3 to 4 minutes, stirring occasionally, until tender. Add zucchini. Cook for a further 1 to 2 minutes.
  2. Add borlotti beans and cook for 5 to 7 minutes, stirring. Remove from heat and fold through fetta, walnuts and parsley. Season with salt and pepper.
  3. Drizzle with remaining oil and lemon juice. Mix well and serve.
