To make this dish at home by prescription from the author Gomer would need: 400g mixed salad leaves, 1/2 small Spanish onion, finely sliced, 1/4 cup white wine vinegar, 1/2 lime, juiced, 1 tbsp caster sugar , 1 cup Praise Croutons, 1/2 cup dried cranberries, 1 cup Praise Deli Style Caesar Dressing , Fresh shaved parmesan.

Ingredients:

  • 400g mixed salad leaves 
  • 1/2 small Spanish onion, finely sliced 
  • 1/4 cup white wine vinegar 
  • 1/2 lime, juiced 
  • 1 tbsp caster sugar 
  • 1 cup Praise Croutons 
  • 1/2 cup dried cranberries 
  • 1 cup Praise Deli Style Caesar Dressing 
  • Fresh shaved parmesan 

Instructions

  1. Make a quick pickling liquid by combining the vinegar, lime juice and sugar in a small bowl.
  2. Put a small pot of water on to boil. Once boiling, blanch the sliced onion for 30 seconds. Drain immediately and cool under running cold water. Immerse in pickling liquid, chill for 20 minutes and drain.
  3. In a large bowl, toss together the mixed leaves, croutons, cranberries and Praise Deli Style Caesar dressing. Top with the pickled Spanish onions and fresh shaved parmesan cheese.
