Smoked trout and watercress salad

This colourful salad is a delightful addition to the summer lunch table.

To make this dish at home by prescription from the author Gomer would need: 300g sour cream, 1 tbsp Dijon mustard, 1 tsp finely grated lemon rind, 2 tsp chopped chives, 175g snow peas, trimmed , 1 bunch watercress, trimmed and sprigs separated, 150g smoked trout slices, torn into large pieces, 1/2 small Spanish onion, thinly sliced , salt and cracked black pepper, 16 grissini sticks.
Ingredients:
- 300g sour cream
- 1 tbsp Dijon mustard
- 1 tsp finely grated lemon rind
- 2 tsp chopped chives
- 175g snow peas, trimmed
- 1 bunch watercress, trimmed and sprigs separated
- 150g smoked trout slices, torn into large pieces
- 1/2 small Spanish onion, thinly sliced
- salt and cracked black pepper
- 16 grissini sticks
Instructions
- Place sour cream, mustard, lemon rind and chives in a small bowl, and mix until combined. Set aside.
- Blanch snow peas by dropping them in a saucepan of boiling water for 1-2 minutes, then drain and refresh in cold water.
- Drain snow peas. Arrange on serving plates with the watercress, smoked trout, Spanish onion, salt and pepper. Serve with sour cream mixture on the side and grissini sticks.
