To make this dish at home by prescription from the author Gomer would need: 1 1/2 cups brown rice, 1/2 cup macadamia nuts, toasted, chopped, 2 green onions, thinly sliced, 3 celery stalks, trimmed, thinly sliced, 1 large red delicious apple, cored, cut into 1cm cubes , 1/2 cup plain yoghurt, 1/2 cup mango chutney, 1 tbsp lemon juice .

Ingredients:

  • 1 1/2 cups brown rice 
  • 1/2 cup macadamia nuts, toasted, chopped 
  • 2 green onions, thinly sliced 
  • 3 celery stalks, trimmed, thinly sliced 
  • 1 large red delicious apple, cored, cut into 1cm cubes 
  • 1/2 cup plain yoghurt 
  • 1/2 cup mango chutney 
  • 1 tbsp lemon juice 

Instructions

  1. Cook rice in a large saucepan of boiling, salted water, following packet directions, until just tender. Drain. Refresh under cold water. Drain. Cool for 10 minutes.
  2. Combine rice, macadamias, onion, celery and apple in a bowl. Combine yoghurt, chutney and lemon juice in a bowl. Season with salt and pepper. Spoon yoghurt mixture over rice mixture. Toss to combine. Serve.
