To make this dish at home by prescription from the author Gomer would need: 1 1/2 cups brown rice, 1/2 cup macadamia nuts, toasted, chopped, 2 green onions, thinly sliced, 3 celery stalks, trimmed, thinly sliced, 1 large red delicious apple, cored, cut into 1cm cubes , 1/2 cup plain yoghurt, 1/2 cup mango chutney, 1 tbsp lemon juice .
Ingredients:
- 1 1/2 cups brown rice
- 1/2 cup macadamia nuts, toasted, chopped
- 2 green onions, thinly sliced
- 3 celery stalks, trimmed, thinly sliced
- 1 large red delicious apple, cored, cut into 1cm cubes
- 1/2 cup plain yoghurt
- 1/2 cup mango chutney
- 1 tbsp lemon juice
Instructions
- Cook rice in a large saucepan of boiling, salted water, following packet directions, until just tender. Drain. Refresh under cold water. Drain. Cool for 10 minutes.
- Combine rice, macadamias, onion, celery and apple in a bowl. Combine yoghurt, chutney and lemon juice in a bowl. Season with salt and pepper. Spoon yoghurt mixture over rice mixture. Toss to combine. Serve.
