To make this dish at home by prescription from the author Gomer would need: 3 large green zucchini, sliced into strips lengthways, 125g cherry tomatoes, halved, 80ml olive oil, 1 300g can chickpeas, rinsed, drained, Salt & freshly ground black pepper , 500g lamb mince, 150g chopped frozen spinach, defrosted, well drained, 1 garlic clove, crushed , 3/4 tsp ground cumin, 1 tbsp chopped fresh continental parsley.

Ingredients:

  • 3 large green zucchini, sliced into strips lengthways 
  • 125g cherry tomatoes, halved 
  • 80ml olive oil 
  • 1 300g can chickpeas, rinsed, drained 
  • Salt & freshly ground black pepper 
  • 500g lamb mince 
  • 150g chopped frozen spinach, defrosted, well drained 
  • 1 garlic clove, crushed 
  • 3/4 tsp ground cumin 
  • 1 tbsp chopped fresh continental parsley 

Instructions

  1. Preheat oven to 230°C. Line a baking tray with foil. Place zucchini and tomatoes cut-side up on lined tray. Drizzle with 2 tablespoons of oil. Bake for 10 minutes. Turn zucchini and bake for 5 minutes or until tender. Set aside for 5 minutes to cool slightly. Transfer to a bowl. Add chickpeas and 2 teaspoons of the remaining oil. Season with salt and pepper, and toss to combine.
  2. Meanwhile, place mince, spinach, garlic and cumin in a bowl. Season with salt and use your hands to mix until well combined. Divide mixture evenly into 8 portions and shape each into an 5.5cm diameter patty. Heat remaining oil in a non-stick frying pan over medium-high heat. Cook patties, turning once during cooking, for 10-12 minutes or until cooked through.
  3. To serve, divide chickpea salad among plates, top with patties. Sprinkle with parsley.
