To make this dish at home by prescription from the author Gomer would need: 1/4 cup tequila, 1/4 cup lime juice, 2 small green chillies, seeds removed, finely chopped, 3 garlic cloves, crushed, 1/3 cup coriander leaves, chopped , 4 chicken breast fillets with skin, Juice of 1 lemon, 1/3 cup lemon-infused olive oil* , 2 pink grapefruit, peel and white pith removed, flesh cut into segments, 16 mint leaves, 1 large or 2 small fennel bulbs, trimmed, very thinly sliced, 4 cups picked watercress sprigs, 1 long red chilli, seeds removed, thinly sliced into very thin matchsticks, Lime halves dipped in sea salt, to serve.

Ingredients:

  • 1/4 cup tequila 
  • 1/4 cup lime juice 
  • 2 small green chillies, seeds removed, finely chopped 
  • 3 garlic cloves, crushed 
  • 1/3 cup coriander leaves, chopped 
  • 4 chicken breast fillets with skin 
  • Juice of 1 lemon 
  • 1/3 cup lemon-infused olive oil* 
  • 2 pink grapefruit, peel and white pith removed, flesh cut into segments 
  • 16 mint leaves 
  • 1 large or 2 small fennel bulbs, trimmed, very thinly sliced 
  • 4 cups picked watercress sprigs 
  • 1 long red chilli, seeds removed, thinly sliced into very thin matchsticks 
  • Lime halves dipped in sea salt, to serve 

Instructions

  1. Combine tequila, lime juice, green chilli, garlic and coriander in a large bowl. Season, then add chicken and toss to coat. Cover and marinate in the fridge for at least 4 hours, preferably overnight.
  2. Heat a chargrill or barbecue to medium-high. Add chicken and cook for 4-5 minutes on each side until cooked through.
  3. Meanwhile, combine lemon juice and lemon oil in a large bowl. Season with salt and pepper. Add grapefruit, mint, fennel, red chilli and watercress and toss to combine. Serve chicken with the salad and salted lime halves.
