To make this dish at home by prescription from the author Gomer would need: 1 bunch asparagus, ends trimmed, 200g roasted salmon fillet, flaked, 150g baby spinach leaves, 1 avocado, flesh sliced, 1 tbsp olive oil , 2 tbsp lime juice, 2 tsp brown sugar, Sesame seeds, to garnish .

Ingredients:

  • 1 bunch asparagus, ends trimmed 
  • 200g roasted salmon fillet, flaked 
  • 150g baby spinach leaves 
  • 1 avocado, flesh sliced 
  • 1 tbsp olive oil 
  • 2 tbsp lime juice 
  • 2 tsp brown sugar 
  • Sesame seeds, to garnish 

Instructions

  1. Blanch the asparagus in a pan of boiling water for 2 minutes. Drain, refresh under cold water then drain once again. Pat dry.
  2. For the dressing, whisk together the olive oil, lime juice and sugar in a bowl. Season with salt and pepper.
  3. Place the asparagus, salmon, spinach and avocado in a large bowl.
  4. Toss the dressing through the salad and sprinkle with sesame seeds.
