Tuna, rocket and Persian fetta salad

To make this dish at home by prescription from the author Gomer would need: 400g orecchiette pasta, 350g punnet tomato medley, halved lengthways, 2 Lebanese cucumbers, quartered lengthways, cut into 1cm pieces, 2 spring onions, trimmed, thinly sliced, 70g pitted kalamata olives , 425g Coles Tuna Chunks in Olive Oil Blend, drained, roughly flaked, 40g baby rocket leaves, 125g Persian marinated fetta, crumbled , Extra virgin olive oil, for drizzling.

Ingredients:

  • 400g orecchiette pasta 
  • 350g punnet tomato medley, halved lengthways 
  • 2 Lebanese cucumbers, quartered lengthways, cut into 1cm pieces 
  • 2 spring onions, trimmed, thinly sliced 
  • 70g pitted kalamata olives 
  • 425g Coles Tuna Chunks in Olive Oil Blend, drained, roughly flaked 
  • 40g baby rocket leaves 
  • 125g Persian marinated fetta, crumbled 
  • Extra virgin olive oil, for drizzling 

Instructions

  1. Cook pasta in a large saucepan of boiling water over high heat for 12 minutes or until al dente. Drain. Refresh in cold water. Separate pasta and drain in a colander. Set aside to cool.
  2. Combine cooled pasta, tomatoes, cucumbers, spring onions and olives in a large bowl. Add tuna, rocket and fetta. Season with pepper to taste. Gently toss to combine. Drizzle with extra virgin olive oil and serve.
