To make this dish at home by prescription from the author Gomer would need: 1 cup dried red lentils, 3 cups water, 1/2 cup burghul, 2 tbsp olive oil, 1 brown onion, chopped , 1 large red onion, thinly sliced, 1/2 tsp sumac, 1/2 tsp paprika , Pinch ground cumin, 1/2 cup flat-leaf parsley leaves, finely chopped, 2 tomatoes, diced, 2 cucumbers, diced, 1 small red onion, diced, 1/4 cup flat-leaf parsley, finely chopped, 1 small lemon, juiced, 1/2 tsp sumac.

Ingredients:

  • 1 cup dried red lentils 
  • 3 cups water 
  • 1/2 cup burghul 
  • 2 tbsp olive oil 
  • 1 brown onion, chopped 
  • 1 large red onion, thinly sliced 
  • 1/2 tsp sumac 
  • 1/2 tsp paprika 
  • Pinch ground cumin 
  • 1/2 cup flat-leaf parsley leaves, finely chopped 
  • 2 tomatoes, diced 
  • 2 cucumbers, diced 
  • 1 small red onion, diced 
  • 1/4 cup flat-leaf parsley, finely chopped 
  • 1 small lemon, juiced 
  • 1/2 tsp sumac 

Instructions

  1. Place lentils in a heavy-based saucepan with water. Cover. Bring to the boil. Skim froth from top of water and discard. Reduce heat to medium-low and simmer, uncovered, for 25 minutes. Remove from heat. Stir in burghul. Cover and set aside.
  2. Meanwhile, heat oil in a frying pan over high heat. Add onion. Cook for 5 minutes or until soft. Add onion to lentil mixture. Mix to combine. (If consistency is too watery, add more burghul.)
  3. Make spiced onions: Combine ingredients in a bowl. Season with pepper.
  4. Make vegetable salad: Combine ingredients and 1/2 teaspoon salt in a bowl.
  5. Spoon lentils onto plates. Serve with spiced onions and vegetable salad.
