To make this dish at home by prescription from the author Gomer would need: 65g canned chickpeas, rinsed, drained, 50g grape tomatoes, halved, 40g roasted capsicum, thinly sliced, 30g baby spinach & baby rocket leaf mix, 30g shaved spicy salami, cut into thick strips , 2 tsp pepitas, 2 tsp balsamic dressing .

Ingredients:

  • 65g canned chickpeas, rinsed, drained 
  • 50g grape tomatoes, halved 
  • 40g roasted capsicum, thinly sliced 
  • 30g baby spinach & baby rocket leaf mix 
  • 30g shaved spicy salami, cut into thick strips 
  • 2 tsp pepitas 
  • 2 tsp balsamic dressing 

Instructions

  1. Combine the chickpeas, tomato, capsicum, spinach and rocket, salami and pepitas in a bowl.
  2. Add the dressing and toss to coat.
