To make this dish at home by prescription from the author Gomer would need: 4 slices traditional Italian Pane Di Casa, 2 tbsp olive oil, 1 tbsp small fresh thyme sprigs, Salt & freshly ground pepper, 6 red oak lettuce leaves, washed , 8 butter lettuce leaves, washed, 8 mignonette lettuce leaves, washed, Dressing , 1 egg yolk, 1 tsp Dijon, 1 tbsp white wine vinegar, 1/3 cup extra virgin olive oil.

Ingredients:

  • 4 slices traditional Italian Pane Di Casa 
  • 2 tbsp olive oil 
  • 1 tbsp small fresh thyme sprigs 
  • Salt & freshly ground pepper 
  • 6 red oak lettuce leaves, washed 
  • 8 butter lettuce leaves, washed 
  • 8 mignonette lettuce leaves, washed 
  • Dressing 
  • 1 egg yolk 
  • 1 tsp Dijon 
  • 1 tbsp white wine vinegar 
  • 1/3 cup extra virgin olive oil 

Instructions

  1. Preheat oven to 180°C. Line a baking tray with non-stick baking paper. Tear the bread into 2-3cm pieces. Toss with the oil and thyme. Season with salt and pepper. Place on the tray. Bake for 20 minutes until golden.
  2. To make the dressing, whisk the egg yolk until pale and creamy. Whisk in the Dijon and vinegar. Gradually whisk in the oil. Season.
  3. Combine the lettuce leaves, half the croutons and a little dressing. Scatter over the remaining croutons. Drizzle with extra dressing to serve.
