Broccolini summer salad with mango salsa

To make this dish at home by prescription from the author Gomer would need: 2 bunches Coles Brand Australian Broccolini®, halved lengthways, 1 bunch asparagus, woody ends trimmed, halved lengthways, 60g Coles Brand Australian Baby Rocket, 1 avocado, stoned, peeled, thinly sliced, 1 small red onion, thinly sliced , 1/2 Calypso Mango®, stoned, peeled, finely chopped, 1 long red chilli, seeded, finely chopped, 1 tbsp coriander, finely chopped , 2 tbsp olive oil, 1 tbsp white wine vinegar.

Ingredients:

  • 2 bunches Coles Brand Australian Broccolini®, halved lengthways 
  • 1 bunch asparagus, woody ends trimmed, halved lengthways 
  • 60g Coles Brand Australian Baby Rocket 
  • 1 avocado, stoned, peeled, thinly sliced 
  • 1 small red onion, thinly sliced 
  • 1/2 Calypso Mango®, stoned, peeled, finely chopped 
  • 1 long red chilli, seeded, finely chopped 
  • 1 tbsp coriander, finely chopped 
  • 2 tbsp olive oil 
  • 1 tbsp white wine vinegar 

Instructions

  1. Place the broccolini in a large heatproof bowl and cover with boiling water. Set aside for 2 mins. Add asparagus and set aside for 2 further mins. Refresh under cold water. Drain.
  2. Combine the broccolini, asparagus, rocket, avocado and onion in a large serving bowl or platter. Combine the mango, chilli, coriander, oil and vinegar in a small bowl. Spoon over the salad and season. Serve immediately.
