Ingredients:

  • 2 tbsp hazelnuts 
  • 120g pkt Coles brand 4 leaf salad mix 
  • 1/4 cup extra virgin olive oil 
  • 1 tbsp white wine vinegar 
  • 1/2 tsp white sugar 

Instructions

  1. Preheat oven to 180°C or 160°C fan. Roast hazelnuts on a baking tray for 5 mins. Transfer to a clean tea towel and rub to remove the skins. Cool, then finely chop.
  2. Place the salad leaves in a large bowl. Combine the oil, vinegar and sugar in a small bowl. Season. Stir in the hazelnuts. Add to the salad and toss to combine.
