Ingredients:

  • 2 bunches baby beetroots, ends trimmed 
  • 250g mixed salad leaves 
  • 1/4 cup Paul Newman's Own Balsamic Dressing 
  • 200g goat's cheese, coarsely crumbled 

Instructions

  1. Preheat oven to 180C. Wrap each beetroot in foil and place on a baking tray. Bake in preheated oven for 35-40 minutes or until tender when tested with a small knife. Remove from oven and set aside to cool slightly.
  2. Use rubber gloves to peel beetroots. Cut each beetroot in half.
  3. Place the mixed salad leaves in a large bowl and drizzle with Paul Newman's Own Balsamic Dressing. Gently toss to combine. Arrange on serving plates and top with beetroots and sprinkle with goat's cheese. Serve immediately.
