Ingredients:
- 1/2 cup sweet chilli sauce
- 2 tsp ginger, finely grated
- 2 garlic cloves, crushed
- 1 tbsp lime juice
- 1 Coles RSPCA Approved Chicken Drumsticks Large Pack
- 260g pkt Coles Brand Asian Salad Kit
- Lime wedges, to serve
Instructions
- Preheat oven to 200C. Place a rack on a baking tray lined with baking paper.
- Combine sweet chilli sauce, ginger, garlic and lime juice in a small jug. Place chicken in a glass or ceramic dish. Pour over sweet chilli mixture, tossing to coat. Set aside for 15 minutes to marinate.
- Place chicken on the rack. Bake, basting and turning the chicken once during cooking, for 35-40 mins or until chicken is cooked through.
- Prepare salad following packet directions. Arrange on a large serving platter. Top with chicken and serve with lime wedges.
