Ingredients:

  • 2 tbsp lemon juice 
  • 1 tbsp Dijon mustard 
  • 2 tbsp olive oil 
  • 1kg barbecued prawns 
  • 2 bunches barbecued asparagus 
  • 200g baby rocket leaves 
  • 2 witlof, leaves separated 

Instructions

  1. Place the lemon juice, mustard and oil in a screw-top jar and shake until well combined. Season with salt and pepper.
  2. Arrange the prawns, asparagus, rocket and witlof on serving plates. Drizzle with lemon dressing and serve immediately.
