Ingredients:
- 2 tbsp lemon juice
- 1 tbsp Dijon mustard
- 2 tbsp olive oil
- 1kg barbecued prawns
- 2 bunches barbecued asparagus
- 200g baby rocket leaves
- 2 witlof, leaves separated
Instructions
- Place the lemon juice, mustard and oil in a screw-top jar and shake until well combined. Season with salt and pepper.
- Arrange the prawns, asparagus, rocket and witlof on serving plates. Drizzle with lemon dressing and serve immediately.
