To make this dish at home by prescription from the author Gomer would need: 500g small cooked prawns, peeled, deveined, 1 Lebanese cucumber, 125g avocado, thinly sliced, 1 small red onion, halved, thinly sliced, 100g Asian mixed lettuce leaves , 80g 97% fat-free mayonnaise, 2 tbsp fresh lemon juice, 2 tbsp extra light sour cream , 1 tbsp chopped fresh continental parsley, 1-2 tbsp water.

Ingredients:

  • 500g small cooked prawns, peeled, deveined 
  • 1 Lebanese cucumber 
  • 125g avocado, thinly sliced 
  • 1 small red onion, halved, thinly sliced 
  • 100g Asian mixed lettuce leaves 
  • 80g 97% fat-free mayonnaise 
  • 2 tbsp fresh lemon juice 
  • 2 tbsp extra light sour cream 
  • 1 tbsp chopped fresh continental parsley 
  • 1-2 tbsp water 

Instructions

  1. Use a vegetable peeler to slice the cucumber lengthways into thin ribbons.
  2. To make the lemon mayonnaise dressing, whisk together the mayonnaise, lemon juice, sour cream and parsley in a small bowl. Gradually add the water, whisking until the mixture is the consistency of thickened cream.
  3. Place the prawns, cucumber, avocado, onion and lettuce in a large bowl and gently toss until just combined. Divide among serving bowls. Drizzle over the dressing to serve.
