To make this dish at home by prescription from the author Gomer would need: 4 thick slices bread, cut into 1.5cm cubes, 250g lean bacon, cut into 1cm pieces, 1 small iceberg lettuce, 1 punnet cherry tomatoes, halved, 2 avocados, peeled and cut into chunks , 1/4 cup olive oil, 1 tbsp red wine vinegar, 1 tsp Dijon mustard .

Ingredients:

  • 4 thick slices bread, cut into 1.5cm cubes 
  • 250g lean bacon, cut into 1cm pieces 
  • 1 small iceberg lettuce 
  • 1 punnet cherry tomatoes, halved 
  • 2 avocados, peeled and cut into chunks 
  • 1/4 cup olive oil 
  • 1 tbsp red wine vinegar 
  • 1 tsp Dijon mustard 

Instructions

  1. Preheat oven to 200°C. Place cubes of bread on a baking tray and bake for 10 minutes or until they are golden and crispy, turning once during cooking.
  2. Heat a frypan over medium-high heat. Add bacon and cook for 3 to 4 minutes or until golden and crisp. Drain on paper towel and keep warm.
  3. Tear lettuce into bite-sized pieces and place on 4 serving plates. Top with tomatoes, avocado, bacon, and croutons. Season with salt and pepper.
  4. To make dressing: Whisk together oil, red wine vinegar, and Dijon mustard. Pour dressing over salad and serve.
