Ingredients:

  • 3 william or beurre bosc pears, quartered and cored 
  • 1 tbsp olive oil, plus 1/4 cup olive oil 
  • 80g walnut pieces 
  • 1/4 cup white balsamic vinegar 
  • 2 tbsp honey 
  • 80g wild or baby rocket 
  • 150g blue cheese 
  • Salt, to season 

Instructions

  1. Preheat oven to 220°C. Place 3 william or beurre bosc pears, quartered and cored, on baking tray. Drizzle with 1 tablespoon olive oil and season. Bake for 20-25 minutes.
  2. Warm 1/4 cup (60ml) olive oil over medium heat. Add 80g walnut pieces and cook for 3-5 minutes. Set aside.
  3. Add 1/4 cup (60ml) white balsamic vinegar and 2 tablespoons honey to walnut mixture, stir and season. Divide 80g wild or baby rocket among plates, top with pears and crumble over 150g blue cheese. Drizzle with dressing.
