Brighten up the evening with this salad starter thats a beautiful mixture of colours and textures.

To make this dish at home by prescription from the author Gomer would need: 1 x 420g can butter beans, rinsed, drained, 50g baby spinach leaves, 1 radicchio, outer leaves removed, washed, torn, 4 ripe yellow egg tomatoes, thickly sliced lengthways, 120g low-fat feta, thinly sliced , 1 1/2 tbsp fresh lemon juice, 1 1/2 tbsp Greek-style natural yoghurt, 1 small garlic clove, crushed , 1 tsp wholegrain mustard, Salt & freshly ground black pepper.

Ingredients:

  • 1 x 420g can butter beans, rinsed, drained 
  • 50g baby spinach leaves 
  • 1 radicchio, outer leaves removed, washed, torn 
  • 4 ripe yellow egg tomatoes, thickly sliced lengthways 
  • 120g low-fat feta, thinly sliced 
  • 1 1/2 tbsp fresh lemon juice 
  • 1 1/2 tbsp Greek-style natural yoghurt 
  • 1 small garlic clove, crushed 
  • 1 tsp wholegrain mustard 
  • Salt & freshly ground black pepper 

Instructions

  1. Combine the butter beans, baby spinach leaves, radicchio, tomato and feta in a large bowl and gently toss to combine.
  2. Whisk together the lemon juice, yoghurt, garlic and mustard in a small bowl until combined. Taste and season with salt and pepper.
  3. Divide the salad among serving plates. Drizzle with dressing and serve with garlic pizza.
