To make this dish at home by prescription from the author Gomer would need: 80g gorgonzola cheese, crumbled, 1/3 cup pecan pieces, 4 chicken breast fillets, 1 tbsp olive oil, 1 baby cos lettuce heart, trimmed, torn , 2 pink lady apples, halved cored, cut into thin wedges, 1 celery stalk, thinly sliced, 1/4 cup whole egg mayonnaise , 2 tbsp lemon juice.
Ingredients:
- 80g gorgonzola cheese, crumbled
- 1/3 cup pecan pieces
- 4 chicken breast fillets
- 1 tbsp olive oil
- 1 baby cos lettuce heart, trimmed, torn
- 2 pink lady apples, halved cored, cut into thin wedges
- 1 celery stalk, thinly sliced
- 1/4 cup whole egg mayonnaise
- 2 tbsp lemon juice
Instructions
- Using the back of a spoon, combine cheese and half the pecans in a bowl.
- Using a small, sharp knife, cut a slit in the side of each chicken fillet to form a pocket. Divide cheese mixture between pockets. Secure with toothpicks. Season with salt and pepper.
- Heat oil in a large frying pan over medium heat. Add chicken to pan. Cook for 6 minutes each side or until cooked through. Transfer to a plate. Cover. Set aside for 5 minutes.
- Meanwhile, combine lettuce, apple, celery and remaining pecans in a bowl.
- Whisk mayonnaise and lemon juice in a small jug. Season with salt and pepper. Drizzle dressing over salad. Gently toss to combine.
- Remove and discard toothpicks. Slice chicken thickly. Serve chicken on salad.
