To make this dish at home by prescription from the author Gomer would need: 2 witlof, trimmed, leaves separated, 3 yellow nectarines, halved, stones removed, cut into thin wedges, 125g punnet fresh raspberries, 80g creamy blue cheese, crumbled, 1/3 cup walnut halves, roughly chopped , 1/4 cup walnut oil, 2 tbsp raspberry vinegar .
Ingredients:
- 2 witlof, trimmed, leaves separated
- 3 yellow nectarines, halved, stones removed, cut into thin wedges
- 125g punnet fresh raspberries
- 80g creamy blue cheese, crumbled
- 1/3 cup walnut halves, roughly chopped
- 1/4 cup walnut oil
- 2 tbsp raspberry vinegar
Instructions
- Place witlof leaves on a platter. Top with slices of nectarine, sprinkle with raspberries, blue cheese and walnuts. Cover and refrigerate until required.
- To make dressing, whisk walnut oil, raspberry vinegar, salt and pepper in a jug. Drizzle over the salad and serve immediately.
