Watercress salad with lemon & mustard dressing

To make this dish at home by prescription from the author Gomer would need: 55g sunflower kernels, 1 bunch watercress, sprigs picked, washed, dried, 1 x 150g pkt baby spinach leaves, 1/2 tsp finely grated lemon rind, 1 1/2 tsp fresh lemon juice , 2 tsp wholegrain mustard, Pinch caster sugar, 100ml olive oil , Salt & freshly ground black pepper.

Ingredients:

  • 55g sunflower kernels 
  • 1 bunch watercress, sprigs picked, washed, dried 
  • 1 x 150g pkt baby spinach leaves 
  • 1/2 tsp finely grated lemon rind 
  • 1 1/2 tsp fresh lemon juice 
  • 2 tsp wholegrain mustard 
  • Pinch caster sugar 
  • 100ml olive oil 
  • Salt & freshly ground black pepper 

Instructions

  1. To make the dressing, whisk together lemon rind and juice, mustard and sugar in a bowl. Gradually add the oil in a thin steady stream, whisking constantly until combined. Season with salt and pepper.
  2. Heat a small frying pan over medium heat. Add the sunflower kernels and cook, stirring, for 2-3 minutes or until golden brown. Remove from heat and set aside for 10 minutes to cool.
  3. Combine the watercress and spinach in a large serving bowl. Drizzle with dressing and gently toss to combine. Sprinkle with sunflower kernels and serve immediately.
