This pretty salad is a delicious combination of celery, olives, orange and watercress.

To make this dish at home by prescription from the author Gomer would need: 1 bunch watercress, sprigs picked, 2 celery hearts with leaves attached , thinly sliced, 2 cloves garlic, 5 oranges, peeled, segmented, 1 1/2 tbsp sherry vinegar , 60ml extra virgin olive oil, 80g black olives, flattened, pitted .

Ingredients:

  • 1 bunch watercress, sprigs picked 
  • 2 celery hearts with leaves attached , thinly sliced 
  • 2 cloves garlic 
  • 5 oranges, peeled, segmented 
  • 1 1/2 tbsp sherry vinegar 
  • 60ml extra virgin olive oil 
  • 80g black olives, flattened, pitted 

Instructions

  1. Place watercress and celery hearts in a bowl of iced water and set aside.
  2. Flatten garlic with the side of a knife, then place in a bowl with the orange. Using a wooden spoon, break up orange with the garlic, then discard garlic. Whisk in vinegar and oil, and season.
  3. Drain watercress and celery and dry well. Place in a bowl, toss with the dressing, then scatter with olives.
