To make this dish at home by prescription from the author Gomer would need: 1 tbsp olive oil, 1 bird's eye chilli, halved, deseeded, finely chopped, 2 garlic cloves, crushed, Sea salt & freshly ground pepper, 3 chicken breasts, halved horizontally , 1/4 cup fresh orange juice, 1/4 cup fresh continental parsley leaves, finely chopped, 3 small oranges, peeled, thinly sliced , 120g mixed lettuce leaves, 1/4 cup Kalamata olives, 65g feta, crumbled.

Ingredients:

  • 1 tbsp olive oil 
  • 1 bird's eye chilli, halved, deseeded, finely chopped 
  • 2 garlic cloves, crushed 
  • Sea salt & freshly ground pepper 
  • 3 chicken breasts, halved horizontally 
  • 1/4 cup fresh orange juice 
  • 1/4 cup fresh continental parsley leaves, finely chopped 
  • 3 small oranges, peeled, thinly sliced 
  • 120g mixed lettuce leaves 
  • 1/4 cup Kalamata olives 
  • 65g feta, crumbled 

Instructions

  1. Combine the olive oil, chilli and garlic in a ceramic or glass bowl. Season with salt and pepper. Add the chicken and toss to coat. Cover and refrigerate for 20 minutes.
  2. Heat a non-stick frying pan over a medium-high heat. In batches, cook the chicken for 2-3 minutes each side or until golden and cooked though. Transfer to a plate and cover with foil for 2 minutes to rest before slicing.
  3. Return the pan to the heat and add the orange juice. Simmer for 1-2 minutes. Stir in the parsley.
  4. Combine the chicken, orange, mixed lettuce leaves, olives and feta in a bowl. Divide among serving plates. Drizzle with orange dressing to serve.
