To make this dish at home by prescription from the author Gomer would need: 1 witlof, leaves separated, 1 red baby cos, leaves separated, 50g baby rocket, 3 radishes, trimmed, thinly sliced, 1 Lebanese cucumber, halved lengthways, thinly sliced diagonally , 2 avocados, halved, sliced, 1 red onion, thinly sliced, 1/4 cup natural seed mix with pine nuts , 2 tbsp lemon juice, 2cm piece fresh ginger, peeled, finely grated, 2 tbsp honey, 1 tbsp Dijon mustard, 3 tsp soy sauce, 1/4 cup olive oil.

Ingredients:

  • 1 witlof, leaves separated 
  • 1 red baby cos, leaves separated 
  • 50g baby rocket 
  • 3 radishes, trimmed, thinly sliced 
  • 1 Lebanese cucumber, halved lengthways, thinly sliced diagonally 
  • 2 avocados, halved, sliced 
  • 1 red onion, thinly sliced 
  • 1/4 cup natural seed mix with pine nuts 
  • 2 tbsp lemon juice 
  • 2cm piece fresh ginger, peeled, finely grated 
  • 2 tbsp honey 
  • 1 tbsp Dijon mustard 
  • 3 tsp soy sauce 
  • 1/4 cup olive oil 

Instructions

  1. Make the Honey ginger dressing: Place all ingredients in a screw-top jar. Season with salt and pepper. Shake well.
  2. Combine witlof, cos and rocket in a bowl. Place leaves on a large serving platter. Top with radish, cucumber, avocado and red onion. Drizzle with Honey ginger dressing and sprinkle with seeds. Serve.
