Tropical fruit salad with spiced guava syrup

To make this dish at home by prescription from the author Gomer would need: 1/2 cup guava juice, 1/2 cup water, 1/4 cup palm sugar, 2 whole star anise, 1 vanilla bean, split , 1/4 papaya, seeded, peeled, cut into 3cm pieces, 1/4 pineapple, peeled, cored, thinly sliced, 12 fresh lychees, peeled , 1 carambola , thinly sliced.

Ingredients:

  • 1/2 cup guava juice 
  • 1/2 cup water 
  • 1/4 cup palm sugar 
  • 2 whole star anise 
  • 1 vanilla bean, split 
  • 1/4 papaya, seeded, peeled, cut into 3cm pieces 
  • 1/4 pineapple, peeled, cored, thinly sliced 
  • 12 fresh lychees, peeled 
  • 1 carambola , thinly sliced 

Instructions

  1. Combine the guava juice, water, palm sugar, star anise and vanilla in a small saucepan over low heat. Cook, stirring, for 5 minutes or until sugar dissolves and syrup thickens slightly. Remove from heat. Set aside to cool completely.
  2. Place the papaya, pineapple, lychees and carambola in a large bowl. Pour over the syrup and cover with plastic wrap. Place in the fridge for 1 hour to chill.
  3. Spoon evenly among serving bowls and serve immediately.
