To make this dish at home by prescription from the author Gomer would need: 1/3 cup light olive oil, 3 tsp white wine vinegar, 1 tsp wholegrain mustard, salt and cracked black pepper, 2 mangoes , 2 bunches rocket, 12 slices prosciutto, torn into large pieces, 1/2 small red onion, sliced .

Ingredients:

  • 1/3 cup light olive oil 
  • 3 tsp white wine vinegar 
  • 1 tsp wholegrain mustard 
  • salt and cracked black pepper 
  • 2 mangoes 
  • 2 bunches rocket 
  • 12 slices prosciutto, torn into large pieces 
  • 1/2 small red onion, sliced 

Instructions

  1. Place the olive oil, vinegar, mustard, salt and pepper in a small bowl and whisk together until fully combined. Set aside.
  2. Cut the cheeks from the mango. Remove the flesh from the skin with a spoon then slice the flesh.
  3. Toss the sliced mango with the rocket, prosciutto and onion and transfer to a serving dish. Drizzle with dressing and serve. Serves 4-6.
