Pear and grapefruit salad with wine-honey dressing

To make this dish at home by prescription from the author Gomer would need: 3 ruby grapefruit, 1 butter lettuce, leaves torn, 2 beurre bosc pears, thinly sliced, 200g feta, 1/3 cup sparkling white wine, chilled , 2 tbsp olive oil, 1/4 cup honey, 1 1/2 tbsp wholegrain mustard , 1 garlic clove, crushed.

Ingredients:

  • 3 ruby grapefruit 
  • 1 butter lettuce, leaves torn 
  • 2 beurre bosc pears, thinly sliced 
  • 200g feta 
  • 1/3 cup sparkling white wine, chilled 
  • 2 tbsp olive oil 
  • 1/4 cup honey 
  • 1 1/2 tbsp wholegrain mustard 
  • 1 garlic clove, crushed 

Instructions

  1. Remove rind and pith from grapefruit. Cut fruit into thin rounds (reserve juice).
  2. Combine grapefruit, lettuce and pears in a large bowl. Crumble over feta. Cover and refrigerate until required.
  3. Make wine-honey dressing: Place wine, oil, honey, mustard and garlic in a jug. Add reserved grapefruit juice and whisk to combine. Season with salt and pepper.
  4. Pour dressing over salad. Toss gently to combine. Serve.
