Radiccio, watercress and witlof salad with pomegranate dressing

Sweet pomegranate dressing is the crowning glory of this beautiful salad side.

To make this dish at home by prescription from the author Gomer would need: 2 tbsp pomegranate molasses, 1 tbsp lemon juice, 2 tbsp olive oil, 1 clove garlic, bruised, 1 radicchio, leaves torn , 1 bunch watercress, sprigs picked, 2 yellow and 1 red witlof, leaves separated, 250g marinated goat's cheese or feta, crumbled , 50g pistachios, roughly chopped.

Ingredients:

  • 2 tbsp pomegranate molasses 
  • 1 tbsp lemon juice 
  • 2 tbsp olive oil 
  • 1 clove garlic, bruised 
  • 1 radicchio, leaves torn 
  • 1 bunch watercress, sprigs picked 
  • 2 yellow and 1 red witlof, leaves separated 
  • 250g marinated goat's cheese or feta, crumbled 
  • 50g pistachios, roughly chopped 

Instructions

  1. Whisk pomegranate molasses, lemon juice, oil and garlic, then set aside. Discard garlic before serving.
  2. Toss radicchio, watercress and witlof with half the dressing. Place on a platter, scatter with cheese and pistachios, and drizzle remaining dressing over. Serve immediately.
