To make this dish at home by prescription from the author Gomer would need: 100g packet wild rice, 200g snow peas, trimmed, thinly sliced, 1 bunch asparagus, trimmed, thinly sliced, 4 turkey breast steaks, 2 tbsp lemon juice , 3 tsp extra virgin olive oil, 1/2 tsp honey, 1 small bunch watercress, washed, leaves picked , 2 tbsp chopped fresh chives, 70g dried blueberries, Lemon zest, to serve.

Ingredients:

  • 100g packet wild rice 
  • 200g snow peas, trimmed, thinly sliced 
  • 1 bunch asparagus, trimmed, thinly sliced 
  • 4 turkey breast steaks 
  • 2 tbsp lemon juice 
  • 3 tsp extra virgin olive oil 
  • 1/2 tsp honey 
  • 1 small bunch watercress, washed, leaves picked 
  • 2 tbsp chopped fresh chives 
  • 70g dried blueberries 
  • Lemon zest, to serve 

Instructions

  1. Cook wild rice in a large saucepan of boiling water following packet directions. Drain well. Set aside to cool.
  2. Meanwhile, cook snow peas and asparagus in a saucepan of boiling water for 2 minutes or until tender crisp. Refresh under cold running water. Drain well.
  3. Use a rolling pin or meat mallet to pound the turkey breasts slightly. Spray a large non-stick frying pan with olive oil and heat over medium-high heat. Cook turkey for 3-4 minutes each side or until golden and cooked through. Slice.
  4. Whisk together the lemon juice, oil and honey in a small bowl. Set aside. Place the cooked rice, snow peas, asparagus, watercress, chives and blueberries in a large bowl. Toss gently to combine.
  5. Divide salad between serving plates.Top with turkey. Drizzle with the dressing and sprinkle with the lemon zest.
