White bean salad with goats cheese croutons

Chunks of cheese-topped croutons are the stars in this easy mix of beetroot and beans.

To make this dish at home by prescription from the author Gomer would need: 100g baby rocket leaves, 50g snow peas, topped, finely shredded, 1 x 420g can cannellini beans, drained, rinsed, 2 tbsp olive oil, 1 tbsp Fig Balsamic Glaze , 1 x 450g can baby beetroot, drained, cut into wedges, 1 avocado, halved, stone removed, peeled, thickly sliced, 1 x 110g pkt goats cheese , 12 Vita Vigor Mini Ciabatte, coarsely broken.

Ingredients:

  • 100g baby rocket leaves 
  • 50g snow peas, topped, finely shredded 
  • 1 x 420g can cannellini beans, drained, rinsed 
  • 2 tbsp olive oil 
  • 1 tbsp Fig Balsamic Glaze 
  • 1 x 450g can baby beetroot, drained, cut into wedges 
  • 1 avocado, halved, stone removed, peeled, thickly sliced 
  • 1 x 110g pkt goats cheese 
  • 12 Vita Vigor Mini Ciabatte, coarsely broken 

Instructions

  1. Place the rocket, snow pea and beans in a large bowl and toss to combine. Divide the snow pea mixture among serving dishes or a large platter.
  2. Whisk together the oil and balsamic glaze in a small jug.
  3. Top the rocket mixture with the beetroot and avocado.
  4. Spread the goats cheese over each piece of ciabatte and arrange on the salad. Drizzle over the dressing and season with salt and pepper. Serve immediately.
