To make this dish at home by prescription from the author Gomer would need: 2 red oak leaf lettuces, 350g butter beans, 80g pkt baby rocket leaves, 100g macadamia nuts, toasted, roughly chopped, 110g goat's cheese, crumbled , 1/4 cup macadamia nut oil, 2 tbsp olive oil, 1 tbsp balsamic vinegar , 1 small shallot, finely chopped, Salt & freshly ground pepper.

Ingredients:

  • 2 red oak leaf lettuces 
  • 350g butter beans 
  • 80g pkt baby rocket leaves 
  • 100g macadamia nuts, toasted, roughly chopped 
  • 110g goat's cheese, crumbled 
  • 1/4 cup macadamia nut oil 
  • 2 tbsp olive oil 
  • 1 tbsp balsamic vinegar 
  • 1 small shallot, finely chopped 
  • Salt & freshly ground pepper 

Instructions

  1. Separate the lettuce leaves and wash lightly, then dry. Tear the leaves into pieces and place in a large bowl.
  2. Cook the beans in a saucepan of boiling water for 2 minutes or until just tender. Drain well, then refresh under cold water. Pat dry. Add to the lettuce with the rocket leaves, macadamia nuts and goat's cheese.
  3. To make the dressing, whisk all the dressing ingredients together.
  4. Pour the dressing over the salad to serve.
