To make this dish at home by prescription from the author Gomer would need: 2 red oak leaf lettuces, 350g butter beans, 80g pkt baby rocket leaves, 100g macadamia nuts, toasted, roughly chopped, 110g goat's cheese, crumbled , 1/4 cup macadamia nut oil, 2 tbsp olive oil, 1 tbsp balsamic vinegar , 1 small shallot, finely chopped, Salt & freshly ground pepper.
Ingredients:
- 2 red oak leaf lettuces
- 350g butter beans
- 80g pkt baby rocket leaves
- 100g macadamia nuts, toasted, roughly chopped
- 110g goat's cheese, crumbled
- 1/4 cup macadamia nut oil
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 small shallot, finely chopped
- Salt & freshly ground pepper
Instructions
- Separate the lettuce leaves and wash lightly, then dry. Tear the leaves into pieces and place in a large bowl.
- Cook the beans in a saucepan of boiling water for 2 minutes or until just tender. Drain well, then refresh under cold water. Pat dry. Add to the lettuce with the rocket leaves, macadamia nuts and goat's cheese.
- To make the dressing, whisk all the dressing ingredients together.
- Pour the dressing over the salad to serve.
