To make this dish at home by prescription from the author Gomer would need: 2 cooked lobster tails, 2 tbsp finely chopped tarragon, 3/4 cup buttermilk, 3 tsp lemon juice, salt and cracked black pepper, to taste , 1 bunch watercress, trimmed, 4 yellow nectarines, sliced into wedges .

Ingredients:

  • 2 cooked lobster tails 
  • 2 tbsp finely chopped tarragon 
  • 3/4 cup buttermilk 
  • 3 tsp lemon juice 
  • salt and cracked black pepper, to taste 
  • 1 bunch watercress, trimmed 
  • 4 yellow nectarines, sliced into wedges 

Instructions

  1. Remove lobster meat from shell and slice into medallions.
  2. Combine tarragon, buttermilk, lemon juice, salt and pepper in a small jug. Set aside.
  3. To serve, place watercress, nectarine and lobster in a bowl, and toss together to combine. Transfer to small individual serving bowls, drizzle with buttermilk dressing and serve.
