Ingredients:
- 2 cooked lobster tails
- 2 tbsp finely chopped tarragon
- 3/4 cup buttermilk
- 3 tsp lemon juice
- salt and cracked black pepper, to taste
- 1 bunch watercress, trimmed
- 4 yellow nectarines, sliced into wedges
Instructions
- Remove lobster meat from shell and slice into medallions.
- Combine tarragon, buttermilk, lemon juice, salt and pepper in a small jug. Set aside.
- To serve, place watercress, nectarine and lobster in a bowl, and toss together to combine. Transfer to small individual serving bowls, drizzle with buttermilk dressing and serve.
