This simple and colourful salad is a great accompaniment to any weeknight meal.

To make this dish at home by prescription from the author Gomer would need: 2 x 310g cans mandarin segments, drained, 1 large red capsicum, deseeded, thinly sliced, 2 large carrots, coarsely grated, 60g snow pea sprouts, trimmed, 3 shallots, trimmed, sliced , 2/3 cup pecans, thinly sliced, 1 tbsp sesame seeds, toasted, 1 1/2 tbsp extra virgin olive oil , 1 tbsp red wine vinegar, 2 tsp honey, 3cm piece fresh ginger, finely grated.
Ingredients:
- 2 x 310g cans mandarin segments, drained
- 1 large red capsicum, deseeded, thinly sliced
- 2 large carrots, coarsely grated
- 60g snow pea sprouts, trimmed
- 3 shallots, trimmed, sliced
- 2/3 cup pecans, thinly sliced
- 1 tbsp sesame seeds, toasted
- 1 1/2 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar
- 2 tsp honey
- 3cm piece fresh ginger, finely grated
Instructions
- Whisk the dressing ingredients in a small bowl until well combined.
- Place the remaining ingredients into a large serving bowl. Drizzle with the dressing and toss gently to combine.
