To make this dish at home by prescription from the author Gomer would need: 3 fresh tomatoes, finely chopped, 1 red capsicum, halved, deseeded, finely chopped, 1 red onion, finely chopped, 1/4 cup fresh continental parsley leaves, chopped, 1/4 cup fresh mint leaves, chopped , 2 tsp ground sumac, 1/2 tsp dried chilli flakes, 80ml extra virgin olive oil , 1 1/2 tbsp red wine vinegar.
Ingredients:
- 3 fresh tomatoes, finely chopped
- 1 red capsicum, halved, deseeded, finely chopped
- 1 red onion, finely chopped
- 1/4 cup fresh continental parsley leaves, chopped
- 1/4 cup fresh mint leaves, chopped
- 2 tsp ground sumac
- 1/2 tsp dried chilli flakes
- 80ml extra virgin olive oil
- 1 1/2 tbsp red wine vinegar
Instructions
- Combine the tomato, capsicum, onion, parsley, mint, sumac and chilli in a large bowl. Season with salt and pepper.
- Drizzle over the oil and vinegar and toss to combine.
