Ingredients:

  • 1 Coles Brand Australian Free Range Egg 
  • 1 tbsp milk 
  • 1 1/4 cups panko breadcrumbs 
  • 2 tsp cracked black pepper 
  • 1 tbsp flat-leaf parsley, finely chopped 
  • 4 Coles Australian Beef Schnitzels, halved crossways 
  • Rice bran oil, to shallow-fry 
  • 2 x 150g pkts Coles Brand Superfood Salad Bowl 
  • 1/3 cup honey mustard mayonnaise 
  • Lemon wedges, to serve 

Instructions

  1. Whisk the egg and milk in a shallow bowl. Season. Combine breadcrumbs, pepper and parsley in a separate shallow bowl. Dip beef in egg mixture, then in breadcrumb mixture to evenly coat.
  2. Heat the oil in a medium frying pan over medium-high heat. Add the beef to the pan and cook for 2 mins each side or until golden. Transfer to a plate lined with paper towel.
  3. Divide salad among serving plates. Drizzle with mayonnaise. Top with beef. Serve with lemon wedges.
