To make this dish at home by prescription from the author Gomer would need: 1 Coles Brand Australian Free Range Egg, 1 tbsp milk, 1 1/4 cups panko breadcrumbs, 2 tsp cracked black pepper, 1 tbsp flat-leaf parsley, finely chopped , 4 Coles Australian Beef Schnitzels, halved crossways, Rice bran oil, to shallow-fry, 2 x 150g pkts Coles Brand Superfood Salad Bowl , 1/3 cup honey mustard mayonnaise, Lemon wedges, to serve.
Ingredients:
- 1 Coles Brand Australian Free Range Egg
- 1 tbsp milk
- 1 1/4 cups panko breadcrumbs
- 2 tsp cracked black pepper
- 1 tbsp flat-leaf parsley, finely chopped
- 4 Coles Australian Beef Schnitzels, halved crossways
- Rice bran oil, to shallow-fry
- 2 x 150g pkts Coles Brand Superfood Salad Bowl
- 1/3 cup honey mustard mayonnaise
- Lemon wedges, to serve
Instructions
- Whisk the egg and milk in a shallow bowl. Season. Combine breadcrumbs, pepper and parsley in a separate shallow bowl. Dip beef in egg mixture, then in breadcrumb mixture to evenly coat.
- Heat the oil in a medium frying pan over medium-high heat. Add the beef to the pan and cook for 2 mins each side or until golden. Transfer to a plate lined with paper towel.
- Divide salad among serving plates. Drizzle with mayonnaise. Top with beef. Serve with lemon wedges.
