To make this dish at home by prescription from the author Gomer would need: 1/2 cup fresh or frozen baby peas, 1 Lebanese cucumber, sliced, 100g baby spinach leaves, 2 green onions, sliced diagonally, 2 ripe avocadoes, peeled and sliced , 1/3 cup buttermilk, 2 tsp lemon juice, 1 small garlic clove, crushed , salt and cracked black pepper.

Ingredients:

  • 1/2 cup fresh or frozen baby peas 
  • 1 Lebanese cucumber, sliced 
  • 100g baby spinach leaves 
  • 2 green onions, sliced diagonally 
  • 2 ripe avocadoes, peeled and sliced 
  • 1/3 cup buttermilk 
  • 2 tsp lemon juice 
  • 1 small garlic clove, crushed 
  • salt and cracked black pepper 

Instructions

  1. Blanch the peas into a saucepan of salted boiling water for 2 minutes. Drain, plunge into iced water for 5 minutes and drain again. Set aside.
  2. Arrange the cucumber, spinach leaves, green onion, peas and avocado on a large serving plate.
  3. Place the buttermilk, lemon juice, garlic, salt and pepper in a small bowl and whisk to combine.
  4. Drizzle the salad with the dressing and serve immediately with the turkey.
