To make this dish at home by prescription from the author Gomer would need: 1 kg baby coliban potatoes, 1 red capsicum, deseeded, finely chopped, 1 red onion, quartered, finely sliced, 3/4 cup Heinz traditional egg mayonnaise, Salt & freshly ground pepper , 4 Heart Smart lamb leg steaks, 2 garlic cloves, crushed, 1 tbsp olive oil , 3/4 cup fresh mint leaves.

Ingredients:

  • 1 kg baby coliban potatoes 
  • 1 red capsicum, deseeded, finely chopped 
  • 1 red onion, quartered, finely sliced 
  • 3/4 cup Heinz traditional egg mayonnaise 
  • Salt & freshly ground pepper 
  • 4 Heart Smart lamb leg steaks 
  • 2 garlic cloves, crushed 
  • 1 tbsp olive oil 
  • 3/4 cup fresh mint leaves 

Instructions

  1. Place the potatoes into a large saucepan and cover with cold water. Bring to the boil over medium-high heat. Boil for about 10 minutes, or until just tender. Drain and refresh under cold running water.
  2. Slice the potatoes and combine with the capsicum, red onion and mayonnaise. Season to taste.
  3. Season the lamb steaks with salt and pepper and rub over the chopped garlic. Heat the oil in a non-stick frying pan over a medium-high heat. Add the lamb and cook for 3 minutes each side, or until cooked to your liking. Transfer to a plate, cover with foil, and rest for 5 minutes.
  4. Serve the potato salad with the lamb, and scatter with mint leaves.
