To make this dish at home by prescription from the author Gomer would need: 1 kg baby coliban potatoes, 1 red capsicum, deseeded, finely chopped, 1 red onion, quartered, finely sliced, 3/4 cup Heinz traditional egg mayonnaise, Salt & freshly ground pepper , 4 Heart Smart lamb leg steaks, 2 garlic cloves, crushed, 1 tbsp olive oil , 3/4 cup fresh mint leaves.
Ingredients:
- 1 kg baby coliban potatoes
- 1 red capsicum, deseeded, finely chopped
- 1 red onion, quartered, finely sliced
- 3/4 cup Heinz traditional egg mayonnaise
- Salt & freshly ground pepper
- 4 Heart Smart lamb leg steaks
- 2 garlic cloves, crushed
- 1 tbsp olive oil
- 3/4 cup fresh mint leaves
Instructions
- Place the potatoes into a large saucepan and cover with cold water. Bring to the boil over medium-high heat. Boil for about 10 minutes, or until just tender. Drain and refresh under cold running water.
- Slice the potatoes and combine with the capsicum, red onion and mayonnaise. Season to taste.
- Season the lamb steaks with salt and pepper and rub over the chopped garlic. Heat the oil in a non-stick frying pan over a medium-high heat. Add the lamb and cook for 3 minutes each side, or until cooked to your liking. Transfer to a plate, cover with foil, and rest for 5 minutes.
- Serve the potato salad with the lamb, and scatter with mint leaves.
