To make this dish at home by prescription from the author Gomer would need: 2 baby cos lettuce, 75g sugar snap peas, trimmed, blanched, 2 spring onions, thinly sliced, 2 tbsp orange juice, freshly squeezed, 1/2 cup olive oil , salt and cracked black pepper .

Ingredients:

  • 2 baby cos lettuce 
  • 75g sugar snap peas, trimmed, blanched 
  • 2 spring onions, thinly sliced 
  • 2 tbsp orange juice, freshly squeezed 
  • 1/2 cup olive oil 
  • salt and cracked black pepper 

Instructions

  1. Cut 2 baby cos into quarters and arrange on a large serving plate. Top with 75g trimmed blanched sugar snap peas and 2 thinly sliced spring onions.
  2. To make dressing, whisk together 2 tablespoons freshly squeezed orange juice, 1/2 cup olive oil, salt and cracked black pepper in a bowl.
  3. Drizzle over the salad and serve.
