To make this dish at home by prescription from the author Gomer would need: 75g sweetened dried cranberries, 1/2 cup apple juice, 30g unsalted butter, 2-3 pink lady apples, cored, sliced, 1/2 large red cabbage , shredded , 1/2 cup chopped flat-leaf parsley, 1/2 cup toasted walnut halves, 2 tbsp red wine vinegar , 2 tsp Dijon mustard, 1/2 cup walnut oil*.

Ingredients:

  • 75g sweetened dried cranberries 
  • 1/2 cup apple juice 
  • 30g unsalted butter 
  • 2-3 pink lady apples, cored, sliced 
  • 1/2 large red cabbage , shredded 
  • 1/2 cup chopped flat-leaf parsley 
  • 1/2 cup toasted walnut halves 
  • 2 tbsp red wine vinegar 
  • 2 tsp Dijon mustard 
  • 1/2 cup walnut oil* 

Instructions

  1. Soak cranberries in apple juice for 1 hour. Drain, reserving juice. Heat butter in a frypan over medium heat, add apple and toss for 2-3 minutes or until golden.
  2. Place in a bowl with cabbage, parsley, nuts and cranberries. Add reserved juice to pan and cook for 1-2 minutes over high heat to reduce by half. Whisk juice together with vinegar, mustard and oil, then season and toss through salad.
