Mandarin, lychee and mint fruit salad

This fresh fruit salad is a perfect dessert on those hot summers days.

Ingredients:
- 4 mandarins
- 1 565g can lychees in syrup, drained, syrup reserved
- 1/4 cup loosely packed fresh mint leaves, chopped
- Thick natural yoghurt, to serve
Instructions
- Peel the mandarins. Use your fingers to carefully separate the segments and remove the fibrous white strands from each. Place the segments in a bowl with the lychees and set aside.
- Place the reserved lychee syrup in a small saucepan and bring to the boil over medium-high heat. Reduce heat to low and simmer, uncovered, for 15 minutes or until the syrup is reduced to about 80ml (1/3 cup). Pour over the mandarin segments and lychees.
- Add the mint to the fruit and gently toss to combine. Set aside for 30 minutes to macerate before serving with the yoghurt.
