Tropical fruit salad with spiced syrup

This spicy syrup adds an exotic twist to a healthy fruit platter.

To make this dish at home by prescription from the author Gomer would need: 1 cup caster sugar, 1 cinnamon stick, 1 star anise, 1 vanilla pod, split and with the seeds scraped out, 5cm-piece fresh peeled ginger , 1 small honeydew, seeds removed and sliced, 1 small pineapple, peeled, halved, cored and sliced, 1 small rockmelon, seeds removed and sliced .

Ingredients:

  • 1 cup caster sugar 
  • 1 cinnamon stick 
  • 1 star anise 
  • 1 vanilla pod, split and with the seeds scraped out 
  • 5cm-piece fresh peeled ginger 
  • 1 small honeydew, seeds removed and sliced 
  • 1 small pineapple, peeled, halved, cored and sliced 
  • 1 small rockmelon, seeds removed and sliced 

Instructions

  1. Place caster sugar, cinnamon stick, star anise, vanilla pod and seeds, ginger and 2 cups water in a medium saucepan. Stir over low heat until the sugar has dissolved. Bring to the boil and simmer for 8 minutes. Set aside to cool. Strain and reserve the liquid. Discard the spices.
  2. Meanwhile place honeydew, pineapple, and rockmelon in a large serving bowl. Pour over the syrup. Place in the fridge for 1 hour, stirring occasionally.
  3. To serve, divide among serving glasses.
